I just had a bowl of my chili. It is hot, but it has mellowed some. So it may not be as hot as I expected. I may have to add some more apice in the morning.

And where is all of the smack talking? Some on! 😂

Bummed I missed it. As I was walking out the door, buddy called that his hot water heater was leaking everywhere.

Sorry I missed out, just joined and got the heads up from Jeff W. on the Gladiator FB page, but looking forward to more events and checking stuff out, especially wrenching parties and technical things.
 
Thank you all for for votes. I was truly surprised. I honestly thought #7 was better. A few of you asked what I did to the ribeye and I showed a few pics.
For those that missed it, what I did was dry age a 10lbs bone-in ribeye roast for 40 days. Was supposed to be 30 but wife came back from trip late. Once ready, trimmed the bark and cut the bone to the knuckle in order to season. 24h before cooking, I dry brined the roast, along with soaking canoe cut marrow in a brine to pull out the blood.
When ready to smoke, rinsed off the roast and then rubbed it down with spices. I then wrapped the roast with the bone marrow, tied it all together and threw it in the smoker till internal temp of ~120ish. Took it out, let it rest for 15 min the flamed the outside with a torch to crust, then sliced to serve. Sorry to make you all hungry again.
I had been doing brisket and/or tri-tip chili the last two months testing things out and had the rib-eye in the freezer too. Overall, there was about 10lbs of meat, 2 cans of kidney beans, 10 tomatoes, spices and a tad bit of ghost pepper.
